Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation:
1) Glass door cooler in kitchen area measured a minimum of 7C throughout the inspection
2) Bean sprouts measured 8-10C
Correction:
1) Move all foods to working coolers. Do not use this cooler until it has been repaired.
2) Operator has not been vigilant about measuring temperature. Ice water is not changed out frequently enough. This is a repeat violation.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation:
1) Bleach sanitizer in bucket measured 0ppm chlorine.
2) Food debris noted on meat slicer. Operator stated that it has not been used today.
Correction:
1) A bleach sanitizer solution of 100ppm (5mL unscented household bleach in 2.5L of water) must be available at all times. A new solution was made at the time of inspection, measuring between 100-200ppm chlorine.
2) Meat slicer to be cleaned and sanitized before use.

Observation: Mildew and mold growth in ice machine.
Correction: Clean and sanitize ice machine.

- cooler has been repaired, measured 4C
- temperature for ingredients must be monitored as well with probe thermometer
- temperature logs must be maintained at least twice daily
- soup is held at a simmer on the stove, >60C
- fish tank decorations removed from food prep area
- leak is being addressed through landlord
- storage area to be reorganized so buckets of potatoes and onions can be stored within the premises
- at least one staff member has been signed up for FOODSAFE, receipt provided
