Observation: 1) Interior of ice machine had build-up of mould/biofilm
2) Lids of ice cream machine were not maintained in sanitary conditions
Corrective Action(s): 1) Empty ice machine bin. Clean and sanitize interior of ice machine more frequently to prevent growth of biofilm.mould.
2) Ice cream machine needs to be cleaned on a daily basis.

Observation: Hot water not available at hand sink located next to the office.
Corrective Action(s): Plumber was called during inspection and will be on-site later today. Ensure all sinks have hot water at all times. Employees are to use the two hand sinks at the front in the meantime, until hot water is available again at this hand sink.

Observation: 1) Underconter cooler doors and handles had build-up of grease
2) Floor in walk-in freezer downstairs (beside walk-in cooler) needs cleaning
Corrective Action(s): 1) Ensure all equipment doors and handles are cleaned and sanitized on a daily basis
2) Floors in walk-in coolers and freezers, as well as floor underneath equipment need to be cleaned once a week at a minimum

Comments

- Hand sinks were supplied with liquid soap and paper towels. Hand sinks at front were supplied with hot water.
- Dishwasher had 50ppm chlorine detected at plate surface level after final rinse cycle
- Quat sanitizer solution available at 200 ppm in spray bottle and from main dispenser
- Bar towels were soaking in 100 ppm chlorine solution; solution changed every 2 hours.
- All coolers were measured to be at or below 4C
- All freezers were measured to be at or below -18C
- Food hot held at above 60C
- Food storage practices satisfactory
- Temperature records up to date
- Pest control in place, reports available for review. No signs of pest activity noted at time of inspection
**Ensure time coding system is in use for burger toppings/condiments at all times.
