Observation: A copy of the permit to operate was received in the mail by the operator and it was available in a drawer on-site. The operator is currently looking for a frame to place the permit into.
Corrective Action(s): Ensure that the permit to operate is posted in a conspicuous location for public view. Correct within 1 week.

Follow-Up Inspection:
-The preparation cooler was repaired and it was at an ambient temperature of 4 degrees C (40 degrees F) or colder.
-A thermometer was available inside this preparation cooler.
Temperature logs were not being maintained.

The following is to be done:
-Ensure that the temperatures of all of coolers and freezers are recorded on daily basis. Keep the temperature records on-site. These will be checked during the next inspection.
-Regularly check the temperature of each cooler a few times throughout each shift to ensure that the coolers are maintained at 4 degrees C (40 degrees F) or colder and the freezers are maintained at -18 degrees (0 degrees F) or colder.
