Observation: Interior of ice machine has some mildew spots begining to grow. This can contaminate ice produced inside the machine.
Corrective Action(s): Clean and sanitize as per equipment manual. Check regularly for return of growth, and clean and sanitize ice machine on a regular basis.

Observation: The following areas have been neglected in sanitary maintenance:

1) Space under shelves of dry storage and pop machines: there is an accumulation of food debris, syrup and filth that could attract pests.
2) Under ice machine and dish washing area: under the mat and the dish washing counter there is filth accumulation
3) In between counter space and wall by pizza oven, and under island prep table in kitchen: there is grease and food debris
Corrective Action(s): Please clean these areas thoroughly, and then regularly going forward.

- No foods stored on ground in dry storage; no signs of pest activity throughout premise
- Ice scoops stored outside of bins
- Good food storage practices in walk in cooler/freezer units
- Clean plates and cutlery protected from contamination
- Vent hood canopy range has no grease or dust build up
- Pizza prep table coolers, and walk in cooler hold below 4 degrees Celsius
- Walk in freezer holds below -18 degrees Celsius
- Cleaning chemicals and equipment stored away from food preparation areas
- Proper thawing and cooling of foods observed during inspection
