Corrective Action(s): All staff using hand sink at the front in the meantime. Ensure the sink repair is completed by end of day today; hand sinks must be easily accessible by all staff at all times.

2) Floor and walls under dishwashing sinks require cleaning

Observation: Hot water tap for hand sink in back kitchen was in the middle of repairs at time of inspection. Staff stated the tap had not been working since Saturday.
Corrective Action(s): Plumber was on-site earlier today and returned during the inspection to complete the repair.

Comments

- Hand sink at front was supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer available at 200 ppm in several buckets and at 3-compartment sink
- 3-compartment sink was set up for manual warewashing
- All coolers were at or below 4C
- All freezer temperatures were satisfactory
- Dipper well was in use for ice cream scoops
- Gravy and other hot held items were above 60C
- Cheese curds for poutine station were held on ice - good
- Food storage practices satisfactory
- Light bulbs were protected with appropriate light covers
- Pest control in place; No signs of pest activity noted at time of inspection
- Staff washroom sink supplied with hot and cold running water, liquid soap, and paper towels

Note: Temperature records missing for some days. Ensure temperature logs are maintained on a daily basis.
