Observation: Food debris and dirt build-up was observed behind the cooking line, in the corners and along the walls.
Corrective Action(s): Clean the above-mentioned areas and ensure that the facility is maintained in good sanitary condition.

Observation: Mechanical dishwasher was not working at the time of inspection. Staff stated that they are aware and have an appointment with technician next week. In the meantime, staff is manually washing dishes in 2 compartment sink using bleach as a sanitizer. The facility uses take-out containers and do not provide dine-in services.
Corrective Action(s): Have the mechanical dishwasher repaired as early as possible. Contact the district EHO when the dishwasher is repaired.

Observation: Operator was not on site. Two staff on duty did not have FOODSAFE Level 1 or equivalent.
Corrective Action(s): Ensure that in operator's absence, at least one staff on duty has FOODSAFE Level 1 or equivalent. Schedule the staff accordingly or have them FOODSAFE certified.

Comments

Routine inspection conducted at the food facility and the following observations were made during the inspection:

Temperature (coolers to be at 4C or less, freezers at -18C or less):
- Pop cooler at 4C
- Walk in cooler (x2) at 4C or less
- Stand-up freezer at -15C
- Refrigeration unit: cooler at 3C, freezer at -14C
- Prep cooler at 2C

Storage:
- All food items were stored at least 6" off the floor.
- All products were found either in original packaging or covered inside coolers.
- Scoops were stored outside the bins in a sanitary manner. Good.
- Storage area was well-organized.
- Chemicals and cleaners were stored separate from food preparation areas.

Sanitation & Maintenance:
- Hand wash station was adequately stocked with hot/cold running water, liquid soap, and single-use paper towels.
- Sanitizer pail available and the concentration of bleach noted at 200ppm.
- Facility uses 2 compartment sink for dishwashing. Staff demonstrated proper dishwashing steps and use bleach as sanitizer.
- Utensils and tongs were found in sanitary condition.
- Washroom was maintained in good sanitary condition with supply of hot/cold running water, liquid soap and single-use paper towels.
- Vents were clean and had no visible grease build-up.

Pest Management:
- No visible signs of pest activity observed at the time of inspection.
- Mechanical traps were present throughout the facility.
- Back screen door was properly closed.

Administrative:
- Operating permit was posted in a conspicuous location.
