Code 302 noted on Routine inspection # ADIG-CCE24D of Mar-10-2022 Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)] Observation: Dishwasher does not have any chlorine, at 0ppm. Operator left during inspection to pick up some, thank you. 45C wash cycle, detergent available. Correction: Please use test strips available to ensure you reach 100ppm chlorine for dishwasher. Redo utensils that were washed today without sanitizer. Date to be corrected by: TODAY.

Quat sanitizer at prep counter is at 200ppm. Thank you. Please continue to use this for all prep surfaces especially after prepping meats and before preparing ready to eat foods such as salads. Checked dishwasher chlorine concentration between 50-100ppm after the second rinse. Operator is using residential bleach to fill commercial bleach bottle. This may not provide the same concentration of bleach this machine was designed for, please check manufacturer's specs. Not recommended to refill and pour bleach chemicals from one bottle to another. Recommend keeping some test strips on site to check dishwasher chlorine levels. Advised to use alternative 2-compartment sink for sanitizing utensils if chlorine in dishwasher is not enough. Facility is currently doing take out only with single use utensils (e.g. pizza boxes) and has minimal dishwashing. No signature required due to Covid19 precautions.
