Observed proper cooling of soups - ice bath, with containers half full
Dishwasher final rinse measured 71C at final rinse (ensure that dishwasher is run empty several times at the start of the day to get it to temperature prior to using it for washing dishes)
100ppm bleach sanitizer was available throughout kitchen - keep wiping cloths stored in bleach when not in use
Glasswasher final rinse contained 100ppm chlorine

Please check expiry of all staff foodsafe certificates - if there is no expiry date on the certificate, it expired in July 2018. Please ensure at least one staff person on shift at any given time has current foodsafe certificate.
