3 compartment sink setup for manual warewashing. 200ppm quats available for in 3rd sink for sanitizing equipment/utensils.
200ppm quats available for use in labeled spray bottle.
Walk in cooler at 3 degrees C.
Freezer at -15 degrees C.
Hot holding at or above 60 degrees C.
Preparation cooler inserts at 3-4 degrees C. Lower section at 3 degrees C.
Temperature monitoring records maintained and available for review.
