Observation: Blanched fries and batter on counter beside cook line. Fries 10 Celsius, batter 24 Celsius.
Discard bater and fries moved to fridge.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Dishwasher final rinse is too low, measuring an internal temperature of 67C.Temperature gauge appears not to be working
Correction: Please have dishwahser serviced. Final rinse internal temperature must be at least 71C . Replace gauge - someone should check gauge daily to ensure that wash cycle reaches 60C and rinse cycle reaches 82C on the gauge.

Dishwasher final rinse measured 72C at dish surface. Thank you. Please replace gauge so that staff can read final dishwasher sanitize temperature.
