Observation (CORRECTED DURING INSPECTION):
1) Ice dispenser cover on dining area soda machine had visible mould.
2) Staff rinsed cooking utensils in sink and did not go through the wash, rinse and sanitize steps.
Corrective Action(s):
1) Clean and sanitize ice dispenser cover. Manager removed part from machine for cleaning at time of inspection.
2) Manager was proactive and asked staff member to properly wash rinse and sanitize steps.

Observation (CORRECTED DURING INSPECTION): Burger boxes in compactor room were not covered/protected.
Corrective Action(s): Due to proximity of food packaging and compactor, if the original packaging is open, take all food packaging into the restaurant itself. Burger boxes discarded at time of inspection.

- sanitizer measured 200ppm quats in spray bottle
- sanitizer measured 100ppm chlorine in wiping cloth bucket
- pest report reviewed - no major issues; continue to follow all pest technician suggetsions

** Ensure time stamps on foods are accurate - dates on cheese at assembly station mistakenly stated that the cheese was viable for the next three days at ambient temperature
