Comments

Several food inserts in prep cooler were still uncovered. Discussed with operator that after lunch rush (3:30pm at time of inspection), food should be covered with a tight fitting lid. This is a repeated violation. Tong should also not be kept inside insert of food (i.e. raw chicken). Place the tong outside of food in a separate insert. Several wet wiping towels are also left on the counter and were placed in sanitizer after inspector identified issue to operator. This is another repeated violation. Further enforcement action shall be taken if repeated infractions are noted in the future. No foods being cooled at time of inspection and only a single tray of croutons were noted to be available. Area under Red Bull fridge is less cluttered but floor cleaning should be improved as fruit flies are still observed in this area. Boxes were elevated off the floor but beer kegs are left there. Discussed with operator to remind cleaners to remove beer kegs and clean behind that area on a weekly basis during deep clean day on Sundays. ->One additional staff will be taking Foodsafe, please e-mail copy of certificate to undersigned asap. Operator who is Foodsafe certified is working at time of inspection. ->Additional panel shall be added to fill door gaps.
