Observation (CORRECTED DURING INSPECTION): Observation: Surface sanitizer bucket measured at 0ppm QUATS concentration. Solution appeared to have food debris inside.
Health rationale: 0ppm QUATS concentration is not sufficient to adequately sanitize food contact surfaces in the kitchen. Microbes may survive and grow and/or produce toxins which cause foodborne illness.
Corrective action: Sanitizer solution in bucket with wiping cloths was replaced during inspection. Sanitizer was measured at 200ppm QUATS concentration. Ensure solution is changed more frequently to avoid inadequate sanitizing concentrations. Ensure solution is tested often and measured at 200ppm QUATS with test strip.

Comments

Observed during inspection:

1) Temperature:
-Walk-in cooler at 4C
-Walk-in freezer at -18C
-Under counter freezer at -18C
-Sandwich cooler at 4C (top and bottom)
-Hot holding units >60C
-Drink cooler at 12C - only for non-potentially hazardous food storage. Ensure no potentially hazardous foods are stored inside the beverage cooler.
-Temperature log maintained (digitally).

2) Sanitation:
-General sanitation satisfactory.
-Handsink in prep area and staff washroom adequately supplied with soap, paper towel, hot and cold water.
-QUATS sanitizer available at 3-compartment sink with drain plugs (dispenses 200ppm QUATS).
-Very little grease build up around cooking units - good! Ensure hard to reach areas around cooking units are deep cleaned often to maintain sanitary condition.
NOTE: Ice machine not in use right now. Operator mentioned they are currently using bagged ice. Regular cleaning of ice machine is completed monthly and recorded.

3) Pests:
-No signs of pests during inspection.
-Orkin Pest Control contracted to complete monthly checks.

4) Admin:
-Foodsafe Level 1 trained employee on premise during inspection.
-Operating permit visible during inspection.
