302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: 1) Low temperature dishwasher dispensing 0ppm chlorine for rinse cycle. Technician contacted at this time. Until the dishwasher is repaired, all dishware to be sanitized by soaking in 200ppm chlorine solution as agreed at this time. Sink plug obtained by the operator at the end of the inspection. 200ppm chlorine solution was prepared in the dishwashing sink. Test strips provided.
2) No sanitizer available for food prep surfaces. Repeat violation. 200ppm chlorine solution was prepared in a bucket to hold wiping rags at this time. Staff was advised to have all food prep surfaces sanitized at this time.
Corrective Action(s): Ensure to have the dishwasher repaired and contact the health inspector to notify. Ensure to have 200ppm chlorine solution available AT ALL TIMES during operation. All food prep surfaces MUST be sanitized before initiating any food prep in the morning, after each possible contamination and every 2 hours during operation. As per progressive enforcement, failure to comply in future inspection(s) may result in issuance of violation ticket(s).

Observation: Mice droppings observed from floors of the following areas:
- Front bar behind small fridges and corners
- Back storage room

Sticky traps placed in the areas.
Corrective Action(s): Ensure to have all droppings removed and treat the area using 1000ppm chlorine solution (1:50). Check for droppings every morning and remove if observed. Block/seal any potential entry points (i.e. holes/cracks). Contact the professional pest control company if situation worsens.

Routine inspection conducted:

- Handwash stations adequately supplied with liquid soap, paper towels and hot/cold running water.
- Coolers operating at/below 4'C. Freezers operating at/below -18'C.
- Hot-holding units operating above 60'C.

General sanitation level of the facility had improved from the last routine inspection. However, some areas still require more improvement as mentioned above.
