Observation (CORRECTED DURING INSPECTION): Dairy products stored above 4C in the dairy cooler. The cooler was overstocked and above the load line, which blocked air flow. Cooler temperatures were at 8-9C. Dairy products had just come in this morning.
Corrective Action(s): Products exceeding the load line were removed and temperatures dropped down to < or = 4C. Operator adjusted the shelf spacing to ensure that the dairy products will not exceed the load line.

Comments

-General sanitation is good
-Hand washing station is equipped with hot and cold running water, liquid soap, and paper towels
-All coolers (Stand-up, under-counter, display) at < or = 4C
-Under-counter freezer at < or = -18C
-Thermometers are available for coolers and freezers
-Temperature logs are available. Ensure they are maintained regularly.
-Three compartment sink is available for manual dishwashing
-Bleach sanitizer is available. Ensure sanitizer is prepared and available at all times. Mix 1/2 teaspoon of bleach with 1L water to achieve concentration of 100-200 ppm.
-Dry storage is well-maintained
-Ice machine is clean. Ice scoop is stored separately
-Chemicals are stored separately from areas of food prep and storage
-No signs of pests observed during inspection
