Observation:
Meat slicer has accumulation of dried food particles.
Corrective Action(s):
Clean and sanitize meat slicer. Ensure slicer is washed, rinsed and sanitized maximum every 4 hours or after each use. To be corrected today.

Observation (CORRECTED DURING INSPECTION):
Cup, sponge and wiping cloth stored in hand sink.
Corrective Action(s):
Remove sponge and wiping cloth from hand sink. REMINDER: dishes are not to be washed in hand sink. The hand sink is only used for washing hands at all times.

Observation (CORRECTED DURING INSPECTION):
1. Several food storage buckets/containers in walk-in cooler were uncovered at the time of inspection.
2. Scoop for hot-held rice stored on top of rice warmer.
Corrective Action(s):
1. Cover all food items with a food-grade cover.
2. Place scoop for hot-held rice in ice water when not in use.

Observation:
Sink plug is used as a floor drain cover near dishwasher.
Corrective Action(s):
Place a secure cover on top of the floor drain. To be corrected by February 1, 2018.

Comments

Routine Inspection:
- Although one hand sink was blocked (see violation code 401 above), all hand washing stations were fully equipped with liquid soap, paper towels and hot/cold running water.
- All temperatures met health requirements:
Coolers maintained at or below 4 degrees Celsius.
Freezers maintained below -18 degrees Celsius.
Hot holding maintained above 60 degrees Celsius.
- High temperature dishwasher sanitizing with >71 degrees Celsius at dish level for final rinse.
- Chlorine (bleach) sanitizer = 200 ppm. Wiping cloths stored in sanitizer solution - good.
- Ice machine clean. Ice scoop stored in designated container.
- No signs of pest activity at the time of inspection - very good.
