Observation (CORRECTED DURING INSPECTION): Quats sanitizer in kitchen was at 0ppm.
Corrective Action(s): Quats sanitizer must be at least 200ppm. Staff said the quats sanitizer is usually changed every 2 hours and at time of inspection the sanitizer had been prepared about 1 hour and 45 minutes prior. Advised staff that during busy periods the quats sanitizer may need to be changed more frequently and to ensure to monitor the sanitizer concentration. Staff changed the quats sanitizer at time of inspection.

Observation: Old mouse droppings under shelving in upstairs storage room.
Corrective Action(s): Monitor for mouse droppings every day and clean them up immediately. Business is serviced by licensed pest control using monitoring traps.

Internal temp of milk measured 12.6deg. C.
All milk discarded.
Reportedly the fridge was repaired & operating at 4deg. C or less. Temperature records not in place for cooler. New fridge due to arrive mid April. In the meantime do not use to store perishables. Failure to comply may result in further progressive enforcement action.

Comments

General observations:
Coolers were 4 degrees Celsius or less. Discussed with staff to ensure double door cooler in upstairs storage room is properly closed to ensure foods are maintained at 4 degrees Celsius or less. The double door cooler is an older unit and there is a need to ensure doors are properly closed.
Freezers were -18 degrees Celsius.
Hot holding units were over 60 degrees Celsius.
Food storage practices are generally good.
Front hand sink stocked with liquid soap and paper towels.
All sinks equipped with hot and cold running water.
Food handler hygiene appeared satisfactory.
General sanitation is satisfactory.
Bleach sanitizer: 100ppm chlorine sanitizer.
No signs of pests noted in the kitchen or customer service area.
Chemicals are stored in a safe manner.
