Observation (CORRECTED DURING INSPECTION): Observed staff member dipping their hands in a sanitizer dip after handling dishes and before touching clean dishes.
Corrective Action(s): Staff members should be instructed to wash their hands at the sink provided with liquid soap and paper towel in place of a hand dip. Hand dips are not adequate substitutes for handwashing.

Adhesive found peeling along gasket in ice machine.
Magnet for undercounter cooler door is loose and has been taped in place.
Corrective Action(s): Replace or refinish rusting shelves
Remove adhesive from around ice machine door.
Manager to tighten screw for magnet on cooler door and remove tape.

Comments

All fridges are maintaining foods at 4 degrees Celsius or colder with the exception of inserts on top of the sandwich cooler. These items are currently being maintained at 4 degrees using ice water baths. Note: New fridge to be installed to replace this unit by the end of May.
All freezers are -18 degrees Celsius or colder.
Sauces and soups are being hot held at 60 degrees Celsius or hotter.
Dishwasher and glasswasher have a 100 PPM chlorine residual at the plate/glass surface during the final rinse.
Liquid soap and paper towel at handsinks.
Note: Staff has been instructed by head office to keep tongs for cooking chicken and breakfast in buckets of ice water behind cooking equipment. Ice is melting too quickly to maintain 4 degree temperature. Staff have decided to set a timer and change out with clean tongs and clean buckets of ice water every two hours until the new refrigeration units are installed and they have a place for them in these cooling units.
