Observation (CORRECTED DURING INSPECTION): Raw fish stored at room temperature. Probe thermometer reading was 11.4C. Operator explains it was thawed over hot water. Operator voluntarily disposed of 1 bowl full of raw fish.
Corrective Action(s): Raw fish should be held at 4C or less as per your sanitation plan. Fish must be thawed in an acceptable manner such as at 4C or less or over cold running water in protected bag/casing
