Observation (CORRECTED DURING INSPECTION): -Preparation cooler too warm -air temperatures ranging between 6 to 9 deg C
Internal temperature of the honey mustard at 8 deg C

-Sauce stored above the fill-line in the Preparation Cooler insert level -two inserts double stacked atop each other -internal temperature at 9 deg C operator indicates it has been there about an hour

NOTE: this was cited in the last routine inspection in September 2023 -Correction Order issued
Corrective Action(s): -Operator adjusted thermostat to a colder setting -check in 30minutes if temperatures have been reduced below 4 deg C otherwise remove all foods to your Walk-in cooler and have the unit serviced

-Do not place potentially hazardous foods aboce the fill-line -the second indented line of as single layer insert is the fill-line

Operator placed the sauce on the lower shelves of the Preparation Cooler
