Observation (CORRECTED DURING INSPECTION): The following were observed/measured on the hot-holding units:
-Buffallo chicken rollerbits measured at 47.4C internal temperature.
-Pepperoni & cheese taquito measured at 58.2C intenal temperature.
-All beef hot dog measured at 47.9C internal temperature.
-Corn dog measured at 51C internal temperature.
Corrective Action(s): Discard aformentioned items. All potentially hazardous foods must be hot held at 60C or higher.

Routine Inspection conducted today.

Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
QUATs spray bottles at 200ppm. 2-compartment sink available for warewashing.
Stand-up coolers, under-counter cooler located at the hot dog line, condiment cooler, and walk-in cooler measured at 4C or lower Stand-up freezers measured at -18C or lower. Temperature logs are well maintained. Temperature logs shows refrigeration and hot-holding units adheres to temperature health requirements.
Ice-cream dispenser measured at 4C internally. Milk dispenser measured at 4C.

NOTE: Ensure ice machine for packaged ice is cold holding at -18C or lower. Ensure all staff on-site is aware of QUAT sanitizer and how to prepare 2-compartment sink for manual ware washing. Ensure thawing of frozen products are conducted in the cooler able to hold an air ambient temperature of 4C or lower. Do not thaw frozen food products under room temperature overnight.
