Follow-up inspection:

-Dishwasher is now reaching minimum sanitizing temperatures as per thermostat and verified at plate level (77deg C as per probe thermometer)
-serviceman had incorrectly installed curtains a few days before affecting temperatures
-Pan Station has no perishables in bottom compartment where too warm temperatures were observed -it is on order for repair
-handsinks well stocked and clear for use
