Observation: Cutting board still screwed down. Operator unscrews regularly for cleaning.
A screwed down cutting board is not easily cleanable, nor is the screw used.
Corrective Action(s): Address so that the cuttingboard can be secured but lifted off easily for cleaning.

Comments

All fridges are 4 degrees Celsius or colder.
All freezers are -18 degrees C. or colder.
Wiping cloths were being stored in sanitizer with a 100 PPM chlorine residual.
Dishwasher final rinse reached 71 degrees C at the cup surface.
Floors behind counter are starting to lift. Thet will need to be repaired or replaced in the near future.
