Observation: 1. Noted containers of food in the walk-in cooler, prep cooler and freezer stored uncovered.
2. Home Depot containers noted in-use for the storage of food.
3. Missing light shield noted on one of the fixtures in the kitchen area.
Corrective Action(s): Protect all food in the refrigerator and freezer units with a plastic wrap or lid to avoid potential cross-contamination of food.
2. Discard the Home Depot containers and use food-grade containers only as the plastic of the Home Depot containers may not be designed for food and intended to be washed and sanitized repeatedly which may lead to a leach to chemicals/ substances into food when used.

3. Install light shields or cover over the exposed bulbs to prevent accidental light bulb bursts which may lead to glass shards getting into food.

Observation: Back door propped open during the inspection.
Corrective Action(s): Keep the back door closed or install a screen on the back door if it is to be propped open to prevent pest entry. This is especially true as the facility is dealing with a potential mouse issue.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Grease buildup noted on the fume hood and interior of the deep fryer cabinet. Grease buildup also noted on the dish sink sprayer coil.
2. Mouse droppings noted on the floor in the dry storage area and also in most places in the back of house dry storage room (where walk-in cooler is located).
Corrective Action(s): 1. Clean and sanitize the aforementioned areas and maintain in a sanitary condition.
2. Sweep, clean and sanitize the floor noted with pest droppings to determine if this is a existing or previous pest issue. If droppings re-appear after cleaning, please contact your pest control company and work alongside them to deter issue.

Routine inspection conducted:
Handwash stations, including the washrooms, were accessible, equipped with hot and cold running water, liquid soap and paper towel.
All refrigerator units were at ≤ 4C.
All freezer units were at ≤ -18C.
High temperature dish machine was able to attain 71C at the plate level during the rinse cycle.
200 ppm bleach detected in the sanitizer container in the kitchen and in 1 of the sanitizer spray bottle in the front of house area.
Interior of the ice machine noted in a sanitary condition.
