Observation: 1) Meat slicer used to cut cheese has some white debris on the unit still. 2) Mildew identified on curtains inside ice machine.
Corrective Action(s): Please thoroughly clean and sanitize the meat slicer and ice machine as directed.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Bleach sanitizer was >200ppm in the kitchen. No sanitizer in the bar.
Corrective Action(s): Owner remixed sanitizer so that there is 100-200ppm bleach sanitizer in the kitchen and bar area. Bottle labelled.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation: No paper towel at two compartment sinks in the kitchen. No soap in the sink adjacent to cooking line. One bucket of water stored in prep sink and owner says he uses it to wash hands when he has flour on his hands.
Corrective Action(s): Soap and paper towel, hot and cold running water must be available at all handwashing sinks. Remove bucket of water at prep sink, properly wash hands under running water as discussed.

Observation: Tubs of tomato sauce stored on the floor of walk-in cooler. Not all foods are covered with a lid in the prep cooler.
Corrective Action(s): All food must be stored 6 inches off the floor and properly covered when not in use.

304 - Premises not free of pests [s. 26(a)]
Observation: Mice droppings found on kitchen floor, dry storage/office room, back area and under bar. No droppings identified on food or food contact surface at time of inspection.
Corrective Action(s): Clean and sanitize all surfaces with 100-200ppm bleach as directed. Immediately obtain professional pest control service, retain service report and contract/invoice.

Observation: One hole (bottom right corner) identified in back door. Hole around piping in dry storage/office space also identified.
