Observation: 1. Excessive, thick, dust build-up observed in vent above oven in front area.
2. Two inserts of sliced cucumber observed stored on the floor in the walk-in cooler, and a bag of red onions observed stored on the floor in the prep area.
3. A container of glass cleaner observed stored above in-use boxes of pop syrup in the back area.
Corrective Action(s): 1. Clean and remove the excessive dust above the ovens to prevent the physical contamination of dust in food product.
2. Corrected during inspection: Food was removed off the floor. Ensure all food and food contact surfaces are stored at least 6 inches off the floor to prevent cross contamination.
3. Corrected during inspection: Glass cleaner was removed. Ensure all chemicals are stored in a separate location below or away from food and food contact surfaces at all times to prevent chemical contamination.

Observations During Inspection:
- No evidence of pests
- Hand washing observed during inspection. Excellent!
- Premises maintained in good sanitary condition
- Handsinks adequately supplied with hot/cold water, soap and paper towel
- Coolers achieving temperatures of 4 C or below
- Freezers achieving temperatures of -18 C or colder
- Hot Holding achieving temperatures of 60 C or greater
- First In First out and date stamping methods observed in use
- All food items covered in cooler and freezer units
- Hair restraints in use
- Light covers in place
- Vegetable choppers/slicer stored in good sanitary condition
