Observation (CORRECTED DURING INSPECTION): Raw fish was stored above potential ready-to-eat foods.
Corrective Action(s): Ensure raw meats are stored below ready-to-eat foods to prevent potential contamination of foods. Raw meat was relocated at the time of inspection.

Observation: Debris was found accumulating on the prep cooler door seals, under the prep coolers, and in the walk-in cooler.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition to prevent potential attraction of pests.

Comments

-Main walk-in cooler was at 4C. Light cover needs to be cleaned or replaced to provide sufficient lighting in the walk-in cooler.
-Back walk-in cooler was at 2C.
-Walk-in freezer was at -16C.
-Prep coolers were at 4C (top and bottom).
-Bar cooler was at 2C.
-Chest freezers were less than -18C.
-Upright freezer is currently not in use and is waiting to be repaired.
-Hot potentially hazardous sauces are cooled at room temperature and moved into the walk-in freezer for rapid cooling, followed by moving into the walk-in cooler. Sauces made the pervious night were at 4C.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer was at 100popm to 200ppm
-Ice machine was found to be clean and sanitary.
-Scoops stored in a sanitary manner.
-Facility is serviced by a professional pest control operator. Inspection report for October 20, 2020 indicated treatment for cockroaches. Evidence of cockroaches are still being observed in the kitchen.
-Washroom clean and sanitary. Handwash stations supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-FOODSAFE Level 1 valid until July 23, 2023.
