Observation: Sandwich prep cooler product inserts measured 12 - 13 C. Cheese at 12 C, Ham at 12 C. Staff unable to verify when the last temperature checks have been made. Managers only can do this. No manager on shift.
Corrective Action(s): Potentially hazardous foods in this unit for greater than 2 hours must be discarded immediately. Replace foods in this unit and supplement all inserts and potentially hazardous food products with ice. Have unit serviced ASAP. Review of this unit and processes will be completed by re-inspection date noted on report.

Observation: Three sink method for dishwashing in place, but one sink stopper available (not correct design). Staff do not know where the proper sink stoppers are located. Impossible to implement proper three sink method of dishwashing without proper sink plugs.
Corrective Action(s): Obtain replacement plugs such that proper dishwashing can take place. This must be done immediately and verified at follow up inspection date noted on report.
