Observation: High temperature was unable to maintain a final rinse temperature of 71C on the dish surface during high volume of use.
Corrective Action(s): High temperature dishwasher must be able to provide a final rinse temperature of 71C on the dish surface during the final rinse to allow for proper sanitizing of equipment and dishwasher. Staff will monitor the sanitizing gauge and will stop warewashing when the gauge does not reach 82C/180F. Dishwashing technician has been contacted to service dishwasher.

Comments

-Walk-in coolers (3 units) were at 4C.
-Walk-in freezer was at -17C.
-Prep coolers have been replaced and were at 4C (top and bottom).
-Cooler unit located under the grill was at 4C.
-Upright cooler in the service area was at 2C.
-Upright freezer was at -18C.
-Hot holding was greater than 60C. Foods were cooked to greater than 74C prior to hot holding.
-Cooked foods rapidly cooled in shallow containers and with mixing ice wands. Cooked foods were at 4C.
-Temperatures checked and recorded daily.
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Quats sanitizer dispenser was tested at 200ppm.
-Quats sanitizer spray bottles were labelled and tested at 200ppm.
-Ice machines were clean and sanitary. Ice scoops stored in a sanitary manner.
-Equipment was found to be clean and well maintained. Equipment disassembled properly for cleaning and sanitizing.
-General food storage practices good at the time of inspection. Raw meats stored below and separately from ready-to-eat foods.
-General sanitation good at the time of inspection.
-Facility serviced by a professional pest control operator.
-No signs of pests noted at the time of inspection.
-FOODSAFE Level 1 valid until November 02, 2026.
