Quats in sink at approx. 200 ppm. **Concentrate bottle almost empty. Make sure replacement bottle is on-hand for switch over. Cooling units below 4 C. Prep cooler lids closed And inserts covered. GOOD. Freezer recently defrosted. Looks good. Hand wash stations all stocked. Note: parts of the ceiling/wall in the walk-in cooler developing light dusting of mould. Make sure staff clean off with soap and water (bleach not necessary) on regular basis to prevent build-up and potential migration to foods in storage.
