Reviewed renovation work in kitchen as per operator request.
- Floor re-grouted and cleaned up at kitchen line, back prep area and walk-in cooler. Much improved and looks good. Dishpit looks really good.
- Ceiling lighting replaced with LED throughout kitchen. Also much improved and should facilitate improved general cleaning in the kitchen. Great, thanks.
**Recommend painting the ceiling at cookline to remove the yellowing effect and paint flaking in a few areas. It will make the kitchen look even better.
- Kitchen has been cleaned up and minimal construction residue observed.
**Make sure construction barrier stays in place until dining area construction and clean up is completed.


Note: Salad prep cooler in cookline demonstrating inconsistent and elevated temperatures, including top insert line and below from left to right. Air movement may also be affected by stacking baking sheets. Have unit looked at and set to coldest setting to offset cold temperature losses at inserts. Ideally, the inside temperatures should be set close to 1 to 2 C to aid top insert temperature controls.
Note: Drawer cooler unit at far end of cookline accumulating and dripping significant amount of water (from compressor?). This water is, in turn, dripping onto floor and promoting biomat formation at grout work.
**Make sure drain line is checked and not plugged, and staff pay attention to the removal of ponding water inside and outside of this unit to prevent build up of biomat.
