Observation (CORRECTED DURING INSPECTION): Glasses run through the glasswasher were not being properly sanitized. See code 308.
Corrective Action(s): Glasses will be run through the dishwasher in the kitchen in the meantime.

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Lid not secured on container of sugar downstairs. Small pieces of cardboard observed inside the sugar. When the lid was opened, a rat dropping that was on the lid fell into the sugar.
Corrective Action(s): Discarded. Keep all food in tightly sealed containers to prevent contamination from pests and extraneous items.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: Low temperature chlorine glasswasher had 0 ppm chlorine measured at the glasses. The sanitizer bottle underneath was full. Discussed with staff on site. No records kept for the glasswasher.
Corrective Action(s): Correct within two days.

Comments

-Records for the glasswasher, dishwasher and coolers are not being kept. This is highly recommended. To test the glasswasher, chlorine test strips are needed. For the kitchen dishwasher, either a thermolabel sticker designed for dishwashers or a maximum hold waterproof thermometer can be used to confirm that it is reaching 71 C at the plate level.
-Dishwasher and refrigerator blank records provided during the inspection.

All coolers were < 4 C.
All freezers were < -18 C.
Bleach sanitizer solution available. It was just over 200 ppm (100 ppm is all that is needed). A new bottle should be purchased.
No pest issues upstairs.
Dishwasher final rinse cycle reached 71 C at the plate level.
Hand sinks supplied with hot and cold water,soap and paper towels.
General sanitation in the kitchen was satisfactory.
