Observation (CORRECTED DURING INSPECTION): 100 ppm quats solution measured from bucket with wiping clothes stored inside. Improper sanitation of equipment/food contact surfaces allows survival of pathogens.
Corrective Action(s): Discard 100 pm quats solution from the bucket and refill the bucket with freshly dispensed quats solution from the dispenser. Clean and sanitize food contact surfaces/equipment with refilled sanitizing bucket. Monitor the quats solution concentration with test strips on a regular schedule.
