- Can opener was greasy.
- Cake packaging materials observed sitting on the floor againt the wall.

Comments

Routine inspection conducted with the presence of the owner couple. Please take corrective action to fix the temperature of the front display cooler.

- General sanitation was OK.
- Hand wash sink fully equipped with hand soap, paper towel and hot/cold running water.
- Hot temperature dishwasher tested 71.4C at the end of the rinse cycle.
- Walk in cooler and dairy cooler < or = 4C.
- Upright freezer, cake storage freezer temperature satisfactory.
- 3- compartment sink has plug and available for cleaning and sanitizing the mixer bowls and cake tools.
- Bleach in spray bottles tested 100-200ppm.
- The table with wooden top for food processing was in a sanitary condition.
- No rodent activity, no small flies observed during inspection.
- Owner has valid FOOD SAFE certificate.
