Observation (CORRECTED DURING INSPECTION): * Hand washing station(only one available on trailer) was not accessible initially upon inspection(not very accessible). Operator told to move rack in front of hand sink to make it more accessible. Hand sink must be accessible for staff to wash hands. Staff wearing gloves are not to be washing gloves but rather discarding gloves after each use and washing hands frequently (eg. when changing tasks, etc).
Corrective Action(s): * Ensure all staff have access to hand washing station at ALL times during operation. Staff to wash hands frequently through out the day. Staff not to wash gloved hands as gloves are disposable and not to be washed! Discard after each use.

* Ensure ALL equipment working properly and monitored/documented; also, water must be working and hot water available at ALL times during operation
* Monitoring records were available; keep checking hot holding units to maintain 60'C/140'F or hotter
* Keep trailer clean/organized while in use
* Ensure staff wash hands frequently
* Follow up inspection to be done
