Observation (CORRECTED DURING INSPECTION): Noted the following foods in full inserts in the open well of cooler unit at 10C to 14C: mushrooms, tomato sauce, cream, margarine. This issue was noted on the previous report.
Corrective Action(s): Do not store potentially hazardous foods above 4C. Obtain lids for the cooler well to help maintain temperatures or put out smaller portions that are turned over within 2 hours during meal rushes only.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): No sanitizer was available on the cookline. Sanitizer available in the two compartment sink and bar area. Reusable wiping cloths were noted to be used.
Corrective Action(s): Ensure sanitizer is readily available in each food preparation area and all reusable wiping cloths are stored in sanitizer to prevent the growth of microbes on the cloths.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Hand wash station on cookline did not have soap. This issue was noted on the previous report. No paper towel available at the two compartment sink by the dishwasher.
Corrective Action(s): Ensure all hand wash stations are fully equipped with soap, paper towel, hot and cold running water at all times.

209 - Food not protected from contamination [s. 12(a)]
Observation: Noted a bag of onions on the ground in the dry storage area as well as some foods in the walk in cooler and two lights above the dishwasher area that did not have covers/sleeves. This was noted on the previous inspection report.
Corrective Action(s): Keep all foods stored off the ground at all times. Obtain/install covers/sleeves for lights.

Comments

All coolers 4C or less (walk in, under counter, bar, prep cooler...etc)
Freezers - 18C or less (chest, walk in)
No hot holding available at time of inspection. All foods are made per order.
General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
Back door was closed at time of inspection.
Meat slicer was in use at time of inspection. Ensure meat slicer is taken apart and thoroughly cleaned and sanitized after each use.
Ice machine appeared clean with scoop for ice stored in holder.
Probe thermometer on site to verify internal cooking temperature of the foods. Ensure probe is sanitized between uses.
High temperature dish washer achieved 71C (with thermolabel).
A follow up inspection will be done to verify all violations have been corrected.
