Routine inspection
- Hand washing stations are maintained. Liquid soap and paper towels available in all stations. NOTE: Consider installing paper towel dispensers with cover to reduce the risk of cross contamination.
- All under the counter coolers are at 4C or colder. Inserts cover is to be closed while not in use. Rotate the food containers to ensure food temperature is at 4C or colder.
- Walk-in freezer is at -18 or colder. Upright freezer is at -18 or colder. NOTE: door seal on the upright freezer is to be clean and sanitized.
- Slurp machine cleaning process is followed.
- Ice machine is clean and ice scoop stored outside in a sanitary container.
- Hot holding unit is at 60C or hotter.
- Three-compartment dishware washing is maintained. More space is to be dedicated for air drying dishware. Shelve are to be cleaned and organized in order to dry the clean dishware properly and in sanitary manner.
General sanitation
- Floors are to be swept and cleaned more frequently. Ensure no food left under the equipment or in hard to reach areas.
- Door handles and equipment facing are to be wiped down and sanitized.
- Cutting boards are regularly cleaned and sanitized.
- No obvious sign of pest activity at this date.
