Observation (CORRECTED DURING INSPECTION): 4 large containers of rice were observed to be cooling at room temeprature. Internal food product temperature measured at 25C to 30C. This is a repeated violation.
Corrective Action(s): Discard all cooked rice cooling at room temperature. Discussed with the operator regardign proper cooling procedure. Food must be cooled from 60C to 20C in 2 hours and 20C to 4C in 4 hours.

Observation: 1. Food stored inside the coolers were not covered.
2. Mop and broom were stored close to the vegetable cutter near the dishwasher. The cleaning equipment are dirty and can potentially contaminate the cutter.
Corrective Action(s): 1. Cover all food stored inside coolers with a food-grade physical barrier such as saran wrap. Do not store food uncovered. Correct by: today.
2. Move the mop and broom to a different location away from food. Do not store sanitary equipment close to food. Corrected during inspection.

- Stand-up cooler at dry storage area at 4C.
- Under counter cooler at 4C.
- Freezer at -17 degrees C.
- Hot food hot held at above 60C.
- Hand washing stations provided with hot/cold running water, liquid soap and single use paper towels.
- 200 ppm bleach sanitizer available in spray bottles.
- High temperature dishwasher registered 74C at the plate level.
- Dough mixer and vegetable cutter maintained in sanitary condition.
- General sanitation excellent.
- No pest activities observed at the time.
