A new hot water tank has been installed. Hot water temperature at the triple sink @ 57 C.
Hot water at all hand sinks ranged from 44-48 degrees C. Good.
Food service equipment and juice dispensers have been cleaned to remove dust etc.
100 ppm chlorine sanitizer available for wiping cloths.
* Ensure dishwasher final rinse (chlorine concentration) and bucket sanitizer concentrations are tested
and recorded at least once a day.

* Walk-in cooler registered 7 C at the time of inspection. Service or adjust the cooler as required
to ensure it is capable of storing food items at 4 C or below at all times.
