Comments

-General sanitation of premises and equipment was satisfactory. Some attention needed in dry storage room to clean up spilled dry goods under shelving.
-Handwashing sinks supplied with liquid soap and paper towel
-Coolers were operating at acceptable temperatures (4C or colder):
-Line cooler 4C
-Sliding door cooler (kitchen) 3C
-Sliding door self serve cooler 2C
-Self serve beverage cooler 4C
-Sliding door cooler (produce/storage room) 4C
-Sliding door cooler (meat, dairy/storage room) 3C
-Foods were wrapped/covered to protect from contamination.
-Freezers were maintaining product in a frozen state.
-Salad bar not in use at the time of the inspection. Ensure while in use, ice level is maintained, minimal product is present and inserts are fully immersed in ice to ensure temperature of products is maintained at 4C or colder
-Hot holding unit not in use at the time of the inspection. Reviewed cooling procedures with Manager.
-High temperature dishwasher was functioning and met sanitizing temperature requirement. Final rinse at dish surface was 77.7C. Temperature is checked by Manager daily.
-Quats sanitizer 200ppm present in kleen pail, in spray bottles which are filled from the dispenser at the 2 compartment sink. Test strips present.
-No signs of pest activity noted at the time of the inspection.
***Mouse bait station noted in dry storage room under shelving. Although product is contained within bait station, rodenticide is not suitable for use within a food premises. Remove bait station and replace with trap for monitoring***
