202 - Food not processed in a manner that makes it safe to eat [s. 14(1)]
Observation (CORRECTED DURING INSPECTION): Kimchi is being made in-house. The kitchen area is not being maintained in the sanitary condition. There's only a 2-comparment sink across from the stoves which has dishes in it, but is also being used for cleaning seafood, etc. There's no clear separation of dirty and clean areas in this kitchen.
Corrective Action(s): Cease and desist kimchi preparation on-site. Any kimchi prepared on-site will be discarded.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Once again, the spray bottles in the kitchen do not have any sanitizer in them. Scented Lysol cleaner is being used to clean instead. Lysol in not an approved sanitizer for use on food contact surfaces. You have been instructed several times to use a proper sanitizer for cleaning countertops e.g. bleach.
Corrective Action(s): Clean and label all the spray bottles 'Bleach/water sanitizer'. Use the bleach solution to sanitize all food contact surfaces. A standing order to be issued for this purpose. If this infraction is noted again, you will get a violation ticket in the amount of $345 as discussed.

Observation: The hand sink is once again blocked off and it's obvious that it is not being used. This is a recurring issue.
Corrective Action(s): Install a mounted soap and paper towel dispenser at the single compartment sink that's in the middle of the kitchen.

304 - Premises not free of pests [s. 26(a)]
Observation: There are a lot of mice droppings in the dry storage room, and in the back storage area. The staff are trying to lay traps themselves to take care of the problem. Clearly, this is not working. Sanitation has to be a priority.
Corrective Action(s): Move and clean all items in the dry storage room and back storage area. Clean under all the shelving units in the kitchen and the room where the heater is. Replace all ceiling tiles that have been moved from the t-bars. Hire a professional pest control company and have them come in for servicing twice a month to start. Submit invoices/work orders for the next 2 months (4 work orders or more).
