Kitchen: - Hand washing stations supplied with liquid soap, paper towels and hot/cold running water. - All coolers (preps, under-counters, walk-in, keg) at or below 4 degrees Celsius. Note: Small prep. cooler near the 2-compartment sink is not in use/turned off. - Freezers at or below -18 degrees Celsius. - QUAT sanitizer (spray bottles) at 200 ppm. - Low temperature dishwasher sanitizing with 100 ppm of chlorine. - Test strips - available. - Ice machine clean. Ice scoops stored in designated containers. - Food storage - organized (covered/off the floor). - Ice-cream scoop is in a dripper well. Dripper well in good operations. Note: Observed in the prep. line coolers accumulation of water.
