Dedicated hand sinks with liquid soap and paper towels in use - Equipment in working order - Food and food utensils are protected from contamination - 3 compartment sink. 200ppm QUATS in use - Cooler at 4C and below; Walk in freezer at -18.6C - Hot holding units between 61C - 65.8C - Temperature logs and FIFO system in place.
