Observation: Chopped vegetables, deli and cream sauces inside the preparation cooler were at 8C.
Correction: Discard all of the potentially hazardous food. Move whole vegetables and processed cheese to another cooler. Ensure potentially hazardous food is stored at 4C or less.
Rationale: Potentially hazardous food kept in the danger zone (between 4C - 60C) for more that 2 hours promotes pathogen growth and toxin accumulation which can cause a foodborne illness.
NOTE: The prep cooler was re-filled at the time of opening (8:30am)

Observation: The doors of the back storage rooms were left open.
Correction: Close the doors or have screen doors installed to allow for ventilation. Keep the doors closed in future.
Rationale: Open back doors allow easy access of pests inside the facility especially in storage rooms where food is stored.

Observation: Preparation cooler was not functioning properly to achieve <4C ambient temperature.
Correction: Service the cooler. Do not use the cooler until it can achieve and maintain a temperature of 4C or less.
Rationale: Properly functioning coolers ensure food safety by holding potentially hazardous food at 4C.
