Observation: Hard to reach areas in the dry storage room require attention for cleaning. Areas behind and under the storage shelves have build up of food debris. The area near the washroom is cluttered with mops and utility buckets.
Corrective Action(s): Create a schedule for deep cleaning the facility to ensure routine sanitation. De-clutter the area to maximize visible floor space for regular monitoring for pest activity. Date to be corrected by: June 7, 2023

Coolers are maintaining 4C
Freezers are maintaining -18C or below
Hot holding unit was holding bacon at 64C
A fresh batch of fries had an internal temperature of 83C
Thermometers are available.

Sanitation:
Hand washing sinks are equipped with hot and cold running water, liquid soap, and disposable paper towels.
3-compartment sink is functional with plugs.
200 ppm QUATS is available.
Sanitizer pails are available in food preparation areas.
Knives are stored in a sanitary manner

General:
Overall storage practices are satisfactory. F.I.F.O principles in use. Items inside coolers/freezers are labelled.
