Observation: Back entrance door was left open for air circulation; may allow for entry of rodents or flies.
Corrective Action(s): Install a screen door at the back entrance to prevent pest entry ( July 14, 2021)

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: Build up of grease noticed in the fume hood, food and grease build up in the dishwashing area, on the floors in the kitchen as well as countertops and undershelving etc.
Corrective Action(s): Throughly clean and sanitize all surfaces in the kitchen including floors. Fume hood requires professional vent cleaning ( July 15, 2021).

Observation: Roasts and other raw meat products were found stored in cardboard boxes in walk-in cooler
Corrective Action(s): Do not store any raw meats/poultry/seafood items in cardboard boxes; must use washable (e.g.either plastic or stainless steel containers). Ensure all raw meats/poultry and seafood are stored on a separate shelf away from vegetables and ready-to-eat foods.( immediately)

Observation: Dessert cooler (white upright fridge) registered 12 C at the time of inspection.
Corrective Action(s): Repair or replace the cooler so that it maintains at 4 C or below at all times. ( Immediately)

Observation: Cleaners and sanitizing agents in spray bottles not labelled with their names rather " concentrations" only.
