Observation: 1. Cabinets for breakfast service: these are caving and deteriorating and appear collapsed on the inside.
Some debris accumulating from the sawdust material is attracting ants - 2 ant bait containers inside this cabinet.
2. Warming unit has water inside from breakfast service this morning.
3. Bakery self serve drawer appears to have food debris inside and outside.
Corrective Action(s): 1. Repair/replace cabinets.
Monitor for ants. (6 months).
2. Drain water and clean the unit after each service.
3. Clean and sanitize the unit after each service.

Food Handler Hygiene
o Hand wash stations are fully supplied with liquid soap and paper towels in dispensers

Storage Temperatures
o Cold holding Coolers are below 4C
o Cold holding Freezers are below -18C
o Hot holding - was not available at the time of inspection.

Food Processing and Food Protection
o Food Storage - Food is stored in covered containers.
-Coolers are organized to prevent cross contamination
-Dry food storage in kitchen appears to be organized and clean; dried goods stored in covered containers.

Maintenance and Sanitation
o Chemical dispensers - 200ppm Quat sanitizer in spray bottles
o Dishwashing - 2 compartment sinks and tubs available for cleaning and submerging. Quat sanitizer used. Additional sinks at the back for dishwashing.
o Storage of chemicals is separate and away from food
o Condition of equipment and surfaces - food contact surfaces and equipment are in good repair and clean condition
o Pest control - there are no signs of pests at the time of inspection.
