Observation (CORRECTED DURING INSPECTION): No hot water was available at the faucets at the start of the inspection. It was stated that a large quantity of dishes were recently washed.
Corrective Action(s): Hot water later became available at all faucets during inspection. Discussed requirements for hot water. Ensure food safety and sanitation plan is followed. Hot water is required at all times operations, including for hand washing and sanitation purposes. Hot water tank service may potentially be required if hot water issues return. As a precaution, management decided to contact a plumber who arrived on site during the inspection to service / inspect the hot water tank.

Routine health inspection.
- Coolers at 4 degrees C or less.
- Freezer at -18 degrees C or less.
- Hot holding internal food temperatures at 60 degrees C or more. Time tracking system also in place.
- Ambient holding (e.g. prepared pizza dough) is time tracked.
- Probe thermometer available on site.
- Food is covered and stored off the floor.
- Hand washing stations (front and back of kitchen, staff washroom) are accessible and supplied with hot and cold running water, liquid soap, and paper towels.
- Three compartment sink is available for manual warewashing. Hot and cold running water available.
- Quats sanitizer available at 200 ppm in sanitizing pail (with wiping cloths), in labeled spray bottle, and from dispenser.
- Stored equipment and utensils in sanitary condition.
- Chemical storage away from food/utensils.
- Hair is restrained, hairnets in use.
- No signs of pest activity observed at time of inspection.
- Temperature logs available and up-to-date.
- Permit posted.
