Observation (CORRECTED DURING INSPECTION): Observed potatoes on a roll rack tray at room temperature. Operator stated they had just come from the cooler, which is contrary to the temperature observation.
Corrective Action(s): Once potatoes have been boiled, they must be rapidly cooled in your walk in cooler. If they are to be used immediately after boiling, ensure the processing & mixing occurs within a maximum of a 2hr time span to prevent excessive bacterial growth.

Observation: Kitchen hand washing station has again been found with the hot water line closed due to a leak.
Corrective Action(s): Repair this hand sink immediately. All sinks must be supplied with hot and cold running water.

Observation (CORRECTED DURING INSPECTION): Observed food items getting thawed at room temperature. Upon observation of EHO doing inspection, products were moved to the walk in cooler
Corrective Action(s): Always thaw your frozen products in the walk in cooler, under cold running water, or cook from frozen.

305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
Observation: Kitchen door left open without screen. Door was observed open for approx. 10min
Corrective Action(s): Immediately shut doors to prevent pest entry. This complex has been dealing with rodents - don't let them become a problem in your restaurant.

Bleach sanitizer found on site at 100ppm, however numerous rags found around the kitchen not stored in the bucket. As discussed, keep rags in the rag bucket to prevent bacterial growth, and to control growth on surfaces like your cutting boards.
Dishwasher reached 74C internally after first cycle
General sanitation of facility satisfactory. Please see above note regarding rodents and doors being left open

Jalebi protected from contamination using both sneeze guard and plastic wrap. Tongs stored in clean container in closed display case. Good
Temperature records are NOT getting maintained. This takes less than 5min each morning and is important both for maintenance and liability. Templates have been provided in the past. Use them!
