203 - Food not cooled in an acceptable manner [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): Facility had two large pots of cooked chickpeas made today (approximately 50L in each pot) and only one ice wand.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less. Two large pots of hot potentially hazardous foods cannot be adequately cooled using one ice wand. One of the containers of cooked chickpeas was portioned into 4 containers approximately 2 inches deep to allow for rapid cooling. Either purchase additional ice wands in the future or make less product.

Observation (CORRECTED DURING INSPECTION): Staff member was observed handling the scoop part of a customer's spoon and not the handle.
Corrective Action(s): All utensils must be handled in a sanitary manner. Do not contact the part of the utensil which is used for eating. Direct hand contact with the eating portion of a utensil may result in cross contamination. Spoon and fork were washed and sanitized at the time of inspection.

Observation (CORRECTED DURING INSPECTION): 1) Tray of shredded coconut was stored on the floor, under a trolley of food.
2) Ice wand was stored on the floor, under shelving units in the walk-in freezer. staff had to use a hook to fish the ice wand from under the shelving unit.
Corrective Action(s): 1) Foods must be stored off the floor and protected from potential contamination at all times. Shredded coconut was discarded at the time of inspection.
2) Store food contact surfaces in a sanitary manner. Ice wands stored on the floor may potentially contaminate foods as it is in direct contact with food when used for cooling. Ice wand was cleaned and sanitized at the time of inspection.

Observation: Black flies were observed in the kitchen by the upright freezer again.
Corrective Action(s): Ensure all surfaces are properly cleaned and then sanitized on a regular basis to prevent pest issues. Contact professional pest control services as needed.

-Walk-in freezer was at -18C.
-Prep cooler was at 4C (top and bottom).
-Front sweets cooler was at 3C.
-Upright freezer was at -16C.
-Cleaning and sanitizing carried out in the 3-compartment sink. Bleach prepared and tested at 100ppm.
-Sanitizer pail labelled and tested at 100ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Raw meats store below ready-to-eat foods.
-Scoops stored in a sanitary manner.
-General sanitation satisfactory.
-Washroom clean and sanitary.
-FoodSafe Level 1 valid until Feb 25, 2022.
